Ingredients:
2 medium-sized sweet potatoes, peeled and grated
1/2 onion, finely chopped
2 cloves garlic, minced
1/2 cup all-purpose flour
1/2 tsp baking powder
1 tsp salt
1 tsp paprika
1/4 tsp black pepper
2 eggs, lightly beaten
2 tbsp olive oil
Instructions:
Preheat the air fryer to 380°F (190°C).
In a large bowl, mix together the grated sweet potatoes, chopped onion, minced garlic, all-purpose flour, baking powder, salt, paprika, and black pepper.
Add the lightly beaten eggs to the sweet potato mixture and stir until well combined.
Using your hands, form the sweet potato mixture into small patties.
Brush both sides of each patty with olive oil.
Place the patties in the air fryer basket, leaving some space between them to allow for even cooking.
Air fry the sweet potato fritters for 10-12 minutes, flipping them over halfway through the cooking time, until they are crispy and golden brown on the outside.
Remove the sweet potato fritters from the air fryer and place them on a paper towel-lined plate to drain any excess oil.
Serve the sweet potato fritters hot with your favorite dipping sauce, such as sour cream or Greek yogurt.
