This simple and flavorful turkey meatball curry is made with budget-friendly ingredients, most of which you probably already have in your pantry. It is one of the easy curry meatballs that you can make with turkey, chicken or pork. Serve with rice or cauliflower rice and some extra vegetables on the side.
My curry meatballs
This recipe for curry meatballs or curry meatballs, if desired, is really easy and uses very accessible ingredients. I often make it in the middle of the week when I want something hearty, nutritious, and affordable. This particular version uses ground turkey meatballs but you can swap it out for chicken or pork.
The meatballs are tender and fluffy, flavored with ginger, garlic and mild curry spices. This creamy red curry sauce is made from coconut with a simple blend of ginger, garlic, curry spices and turmeric as the main flavors. I like to use fish sauce for salt because it adds more of an umami taste.
With a few simple veggies like carrots and red peppers thrown in for good measure, these curry meatballs are nutritious, flavorful, and budget-friendly. It is mild so it should be suitable for children as well.
Serve the curried meatballs over rice or cauliflower rice so you can soak up all of that delicious creamy sauce.
Curry meatball ingredients
Ground turkey - This is a healthy option for ground or ground turkey because it's less fat and very flavorful. You can also use minced chicken or pork for these meatballs.
Curry Spices - This is a Southeast Asian inspired curry but instead of using a curry paste, I just use mild curry spices and turmeric as well as garlic and ginger as the main flavors.
Coconut Milk - Canned full-fat coconut milk, be sure to shake the can before use. You can also use coconut cream, which is the thickest part of coconut milk and add some water or stock to thin it out.
Vegetables - onions, carrots, and red peppers are what I used before. You can substitute them with whatever is in season.
Others - Fish sauce, lime juice, a little brown sugar (which can be omitted or substituted with coconut sugar or regular white) and tomato paste are also used to flavor the curry sauce. Fish sauce can be replaced with 1 teaspoon of salt.
How to make curry meatballs

Step 1. Mix the ingredients for the meatballs and use your hands to fold the mixture until everything is well combined.
Step Two: Roll small meatballs, with about a tablespoon and a half or so of meat per ball. sit aside.
The third step. Heat a large skillet/frying pan over medium-high heat. Once hot, add 2 tablespoons of oil. Place the meatballs in the pan and press them down slightly with your fingers. Cook for 5 minutes on each side, until browned. Remove from the pan. If you use the same pan, wash it first.
Step 4. Make the curry sauce. Heat the skillet over medium heat and add 2 tablespoons of olive oil or coconut oil. Add onions, carrots, and red peppers and cook for 2-3 minutes.
Step 5. Then add the garlic and ginger and cook for a minute or two, stirring a few times. You can add another spray of oil if it dries out.
Step 6. Stir together the curry powder, turmeric, and brown sugar. Then we pour in the coconut milk, fish sauce and lemon juice and stir to mix. Cook for 2-3 minutes over medium-low heat, stirring a few times.
Step 7. Add the meatballs again and stir with the sauce. Cook for 1-2 minutes and finish with fresh cilantro.
Serve over rice with broccoli, broccoli, or other Asian vegetables and cilantro/cilantro on top.
